It’s a wonderful meal replacement with two delicious flavors to choose from. The rich, creamy Chocolate or birthday cake Vanilla each make thick delicious shakes just by adding water, Almond milk and a couple of ice cubes and whirring in a blender. Those shakes can easily be customized by adding frozen berries, bananas or even peanut butter.

But the possibilities don’t end there. Treat yourself to some love at first bite short bread cookies that don’t even need baking in the oven! This recipe is ever so slightly adapted from the QuiAri blog.

Gluten-Free Protein Millionaire Shortbread

INGREDIENTS 

Shortbread Layer 

1 ¼ cup of coconut flour

¾ cup of pure maple syrup

½ cup of coconut oil melted

1 scoop of Vanilla QuiAri Shake

¼ teaspoon of sea salt

baking spray

Caramel Layer

1 cup of pitted dates

2 tablespoons of almond butter

¼ cup of pure maple syrup

¼ cup of coconut milk (make sure to use unsweetened from a well shaken can)

1 pinch of sea salt

1 teaspoon of vanilla extract

Chocolate Layer 

1 cup of dark chocolate chips (my favorite are the good quality bittersweet chips from Trader Joe’s)

3 tablespoons of coconut oil

1 pinch of sea salt

DIRECTIONS 

Shortbread Layer 

  1. Spray an 8-inch square pan with baking spray. Mix all the ingredients for the shortbread in a mixing bowl.

  2. Spread all the mixture onto the bottom of the prepared pan and press to cover entire surface. Place it in the fridge for about fifteen minutes while you mix the next layer.

“Caramel” Layer

  1. Add all the ingredients for the “caramel” layer into a high-powered blender and whir until completely smooth.

  2. Spread the mixture onto the chilled, prepared shortbread layer. Put the pan back in the fridge for another 15 minutes.

Chocolate Layer 

  1. Melt the chocolate chips, coconut oil, and sea salt using a heatproof bowl set over a pot of simmering water or a double boiler. Be sure the water doesn’t touch the bowl.

  2. Remove from heat and allow the chocolate mixture to cool for about 5 minutes before pouring the chocolate layer onto the prepared pan that has been chilling.

  3. Finally, put the entire pan with the 3 layers onto the fridge for another 20-30 minutes. Remove the bars from the pan, cut them into 2-inch squares. Enjoy!
